Nothing is more embarrassing than showing up to a party or dinner empty-handed. And nothing is more delightful than wowing a crowd with a delicious dish or treat. So it’s with your self-esteem in mind that our staffers (and significant others) share their favorite quick-and-easy holiday recipes, perfect for office parties or family meals.
Pink Stuff
It tastes like dessert, but you eat it with your meal.
You’ll need:
1 can Eagle Brand Condensed Milk
8 oz. Cool Whip
1 can Cherry Pie Filling
1 small can crushed pineapple
Instructions:
Drain pineapple; Mix all ingredients together. Chill. Serve.

Neiman Marcus Dip
You’ll need:
2 jars Old English Cheese Spread
8 oz. cream cheese
1/2 cup slivered almonds
1 bunch of green onions, chopped
Jar of Hormel Real Bacon Bits
Instructions:
Mix together. Serve with crackers.

Asparagus and prosciutto appetizer
You’ll need:
Olive oil
20 spears of fresh asparagus, trimmed
20 slices of prosciutto
Instructions:
• Preheat the oven to 450 degrees F. Line a baking sheet with aluminum
foil, and coat with olive oil.
• Wrap one slice of prosciutto around each asparagus spear, starting at the bottom, and spiraling up to the tip. Place the wrapped spears on the prepared baking sheet.
• Bake for 5 minutes in the preheated oven. Remove, and shake the pan back and forth to roll the spears over. Return to the oven for another 5 minutes, or until asparagus is tender, and prosciutto is crisp. Serve immediately.

Green rice
You’ll need:
1 cup raw rice (Minute Rice)
1/2 stick butter, melted but cool
1 pkg (10 oz.) frozen chopped broccoli, thawed
1 can cream of mushroom soup
1 can cream of celery soup
1 can of water
1/2 pound Velveeta cheese, cubed
Instructions:
Mix rice and melted butter together in oven-proof casserole that has been sprayed with Pam. (3 quart casserole should do it.) Mix in all other ingredients and blend well. Cook about 1 to 1 1/4 hours at 375 degrees, preheated oven. Cooking time may vary depending on how long mixture sets before baking. The longer it sits, the less cooking time is needed. You might want to stir once midway through the baking to mix up the cheese.
